Overall, not the best selection, but I'm checking out three new ones with potential.

Fate/Apocrypha - for followers of the Fate franchise.

Isekai Shokudou - a silly premise but cute, good animation.

Youkai Apartment no Yuuga na Nichijou - life in a monster apartment.

I captured Quiet, but she is being held in a cell at Mother Base, do I get to use her later as a buddy? Same for DD, do I need to do anything for him to get bigger or do I just play the story?

You just continue the story for quiet. It takes a while for her though. And with dd, i think he grows up after some in game time i think. I can't promise that though
