I used chopsticks for all of them, because I don't like having rice, vinegar and soy sauce sticking to my hands...
Also America is really stingy when it comes to wasabi since nearly 98% of wasabi they serve is fake and made from horse radish. You might need to go to a high end sushi place to get anything close to real wasabi...

And not only in America is so, even here on/in Europe is so: Because at the export of original wasabi lose they their aroma and etc. easily, and it'd be too expensive in public-quantity, if it pure were... Where then really only at exclusive stores and restaurants offering it...

Well its not impossible to get exports from Japan to keep it as fresh as possible, but it has to be used on the same day, and exporting products like that is costly...
I agree that the best way to get the best sushi experience would be to go to Japan yourself
