Ah, I see. Just remember to not be afraid of the pan/wok when cooking.
My only tip when making salmon is to just watch it carefully starting from skin side down and flipping it over when half of it has gone pink. The time it takes varies depending on the heat.
As for fried rice, you can choose to add some of beaten egg mixture into the rice first (assuming you're using eggs but I don't see why you wouldn't) stir-fry the rice, then add the rest of the egg later to make it taste better.
If you're using any meat, cook it with onions (or whatever first), take it out of the wok, and then add it to the rice mixture later once it and the eggs have cooked. Then add your little greens (most likely spring onions) and stir until you think it's done.
yep, sounds about right. had leftover chicken, so i added that later. actually made an omelet separately instead of adding it to the rice. dont usually do this, but wanted to for some reason.
it was ok, i guess. didnt turn brown, still soft, but it was not umm.. not a bit liquid? not jelly-like? not slimy? you know what i am trying to say~
added a bit of sugar, since i wanted it a bit sweet.
